6 small UI improvements: saving labels and mobile tap feedback

Opened-date and received-date buttons now say Confirming/Opening/Receiving while saving, the daily review loading state announces itself to screen readers, and three tappable rows (grade thumbnails, a safety stat tile, and the item Add field button) show tap feedback on mobile.
